Wine from overripe grapes

The Nineveh 2018 of Ermes Pavese is produced only from overripe grapes of prié blanc in purity. It is an autochthonous vine of the Aosta Valley bred with the traditional low pergola system to protect the grapes from the harsh night temperatures. The vineyard from which this wine is produced, is one of the most wings of Italy and the vineyards look directly at Mont Blanc. We are, in fact, at about 1200 meters s.l.m. and also the prié blanc is still a pre phylloxera vine, cultivated, therefore, on a free foot without the help of rootstocks.

The grapes of Nineveh of Ermes Pavese are harvested by hand from the first ten days of December. The temperatures are very low, between the minus 5 and minus 10 , then. The bunches are frozen. Once in the cellar they are pressed and the slow fermentation takes place in steel. After the vinification the wine continues to rest in the same tanks for about a year and is bottled in the following autumn.
Ninive 2018 by - Ermes Pavese is a wine with kaleidoscopic aromas. Rich and complex is its olfactory spectrum that turns from citrus notes, d candied fruit and honey notes and sweet spices. At times it seems to smell of orange blossom and candy. Then a herbaceous note that lightens and teases the nose. Its sip is not opulent at all, indeed it is a richly acidic sip, which gives a remarkable freshness and plays with a long savory line.

Winegrower and vintner: Ermes Pavese

The company Ermes Pavese is as Prié Blanc as Priè Blanc prays is to Pavese Ermes. It is a story that goes in parallel. The company’s viticulture is almost entirely focused on a single grape variety, precisely, the Prié Blanc. A native grape from the Aosta Valley that is raised at an altitude that is unthinkable at the very least. We are, in fact, 1200 meters from the sea level. This is not insignificant considering that, on average, the vineyards do not reach more than 700 metres of sea level. For Ermes Pavese, the concept of "heroic viticulture" is really worth it.

The company produces in addition to the Blanc de Morgex and La Salle traditional, "Nathan" a Blanc de Morgex and La Salle matured in barrels and "Ninive" a wine with over ripe grapes, and recently two other wines have entered "Le 7 Scalinate" a Blanc de Morgex and La Salle whose grapes come from a single vineyard and finally a Pavese Classic Method.
