Birchermüesli

The Swiss Birchermüesli is a very healthy breakfast, which covers all the nutritional bases in a single bowl.

a bit of history…

Maximilian Oskar Bircher-Benner was a Swiss physician specializing in natural medicine and a great pioneer of raw food.

In 1891 he opened a practice in Zurich where he advised his patients on a raw vegetable diet which he personally experimented with.

The best known element of his creation was the “apple diet meal”, or simply “the meal”, better known today as Bircher Müesli.

Inspired by the meals eaten by Swiss shepherds, from around 1900 this raw vegetable dish was served in his private clinic.

The patients in his clinic got up at 6 in the morning, took a walk before breakfast breathing invigorating oxygen from the forest, spent most of the day in the open air, interspersing the activities of the clinic such as massages, sunbathing, cold showers, dancing and music; and they went to sleep at 9.

They ate live food, no tea, coffee, alcohol, tobacco, meats, highly cooked dishes and industrial products.

Ingredients

  • 3 red apples
  • 2 green apples
  • 250 gr toasted oat flakes
  • 250 gr quark
  • 200 gr natural yogurt
  • 70 gr dried raisins and various dried fruit
  • 240 gr honey

Instructions

  • In a very hot non-stick pan, toast the oat flakes.
  • In a bowl add the grated apples and all the other ingredients.
  • Mix with the toasted oat flakes.
  • Portion into small glasses.
