Vinification
The selected bunches, not destemmed, are pressed and left to macerate for 48 hours in cold (5 º) and then undergo a soft pressing.
The fermentation is done in French oak barriques of several steps with frequent batonnage. After a year in wood, the wine of the different barriques is assembled in stainless steel barrels, for a year.

To obtain the Val d'Aoste Blanc from Morgex and La Salle "Nathan" A O P from Ermes Pavese, the bunches are selected after a careful manual harvest, they are pressed by hand and left to macerate 48 hours cold and then undergo a gentle pressing. The fermentation is done mainly in French oak barrels of first, second and third passage with frequent batching. After 1 year, the wine is assembled with 30% steel fermentation. 10 months in bottle finish the refinement of this wine which, with this particular interpretation expresses new perfumes and new sensations.
Ermes Pavese is located in the hamlet of La Ruine in Morgex, places that have always been linked to the culture of Prié Blanc. The philosophy of the winery is based on the old family values of respect for tradition, strong connection with the territory and the great passion that serves as a common thread for all phases of production.
The Prié Blanc, from which we draw the Blanc de Morgex and La Salle, is an indigenous and ancient grape variety with early maturation, pronounced acidity and resistance to spring frosts that allows its cultivation at these altitude levels. The same altitude and the harsh climatic conditions allowed this grape to resist phylloxera, so that it is not necessary to graft on American vines but that they are "à pied franc".
DEGUSTATION NOTES
Bright golden yellow. On the nose, it is expressed by notes of ripe fruits with yellow flesh and traces of dehydrated apricots. On the palate, it is warm and smooth, with strong minerality and toasted notes.
WINE PAIRINGS
It is accompanied by charcuterie, medium-ripened cheeses, shallots of foie gras, crustaceans. It can serve a full meal, even of red meat. Perfect with rabbit, pork and game bird meat.
