Vinification
Whole, unbranched bunches are gently pressed. The first fermentation is made of steel. After a stay of about 9 months on fine lees, it is bottled with selected natural yeasts. A second fermentation in bottle takes place. After 18 months spent on the yeasts, disgorgement is carried out. At the time of filling, no sugar is added, but only the same wine from the same year.
