Sweet & sour sauce
The syrup for sweet and sour vegetables is the “glaze” in which the cooking of the Asian food of the same name is finished.
It comes as a very versatile sauce, which can be used as a condiment separately or to create numerous Asian dishes such as sweet and sour vegetables, sweet and sour chicken, sweet and sour onions, sweet and sour peppers …
To create the sweet and sour vegetables, cut the vegetables into good shape and blanch them in water and salt, but keep them al dente; finish cooking in the sweet and sour sauce.
For the sweet and sour chicken, on the other hand, obtain strips from the chicken breasts, flour them and brown them in a pan with a little oil, add the sauce and optimize cooking; there is a more crunchy variant, that is to fry the chicken in batter and only at the last moment sauté with a little bit of sweet and sour sauce.
