Spinach flan with Taleggio cream
The flan with spinach is a delicious appetizer consisting of a soft savory pie based on spinach, made more delicious by a creamy cheese sauce.
You can replace the taleggio with the fondue of another cheese.
Spinach flan with Taleggio cream
Ingredients
Flan of spinach:
- 700 g spinach
- 6 eggs
- 120 gr grated parmesan cheese
- 30 gr pine nuts
- 150 gr breadcrumbs
- oil
- salt
- pepper
- nutmeg
Cream of Taleggio:
- 300 gr Taleggio cheese
- 200 ml cream
Instructions
For the flan:
- Sautee the spinach with shallots
- Combine all the ingredients for the flan and blend
- Arrange the dough in buttered cakes
- Cook in a bain-marie at 180°C for 30 min.
For the Taleggio cream:
- Combine in a saucepan the cream and the taleggio cut into cubes.
- Over low heat gently melt the taleggio in the cream.
- Turn out the flan and cover it with taleggio cream.
