Coconut financiers
The Financier, a great French classic, are soft sweets (small plumcake) in the shape of an ingot.
They always have almond flour and egg whites as a base and are characterized by “hazelnut butter”, a melted butter until obtaining a golden color and the taste of hazelnut.

Ingredients
- 300 gr powdered sugar
- 230 gr egg white
- 180 gr melted butter "hazelnut"
- 50 gr jam
- 80 gr rapé coconut
- 80 gr flour
- 80 gr almond flour
Instructions
- Mix the flours with the sugar and coconut in a planetary mixer, add the egg whites a little at a time.
- Stop the mixer and add the jam.
- Operate the planetary mixer again and incorporate the "hazelnut" butter slowly, and work until a homogeneous mixture is obtained.
- Put the mixture in the silicone molds and bake at 180 ° C for 12 minutes.
- Cool well and unmold gently only when they are cold, they could break.
Notes
You can freeze them for storage.
