Frangipane cream

Frangipane cream, simply called “frangipane”, is a cooking cream or filling made with almond flour, sugar, butter and eggs to which you can add flavorings.

Here you will find my version with the use of marzipan.

Ingredients

  • 100 gr sugar
  • 100 gr soft butter
  • 100 gr whole eggs
  • 100 gr marzipan
  • 50 gr flour
  • Aromas to taste I recommend: orange blossom citrus zest, Rum, almond extract

Instructions

  • Whip the soft butter and sugar, in the case of adding flavorings this is the best time to do it, as the aromas have the maximum release of flavor in contact with fats.
  • When the mixture is frothy, add the eggs, one at a time.
  • Add the marzipan in small flakes.
  • Finally add the flour and mix by hand.
  • This filling requires cooking, it must therefore be inserted into a cake before baking it.
