Pancakes

Pancake is a traditional breakfast dessert in North America and, with many variations, in other parts of the world. These are pancakes similar to crêpes, but about 3-5 mm thick: they are generally sweet, accompanied by maple syrup, jam or peanut butter, but they can also be salted, with melted butter on the hot pancake, eggs, bacon and with garnitures (Nutella, honey, jams …).

I also propose the recipe for yogurt pancakes, without eggs; try them, they will surprise you.

Ingredients

  • 280 gr flour
  • 130 gr sugar
  • 20 gr yeast
  • 250 gr milk
  • 50 gr peanut oil
  • 250 gr whole eggs about 5 eggs
  • maple syrup or blueberries

Instructions

  • I create a mixture with all the liquid ingredients.
  • Flour, yeast and sugar in a planetary mixer, add the liquid mixture twice (first 2/3 and when the remaining 1/3 is smooth).
  • Mix for a few minutes.
  • In a hot, non-stick, round saucepan, put a small ladle of mixture and cook on both sides, thus creating the pancakes.
  • !!! it will be time to turn the pancakes when on the surface of the uncooked part you will begin to see some small bubbles and the surface will be opaque !!!

Notes

Garnish with blueberry jam or maple syrup.
